Madeira cake with mulled wine sauce

Ingredients
- 140ml/5fl oz red wine
- pinch ground cinnamon
- pinch ground ginger
- 100ml/3½fl oz cherry juice from a tin
- 2 tbsp caster sugar
- ½ orange, zest only
- 1 orange, juice only
- 3 slices of ready-made Madeira cake
Method

Place the red wine with the spices, cherry juice, sugar, orange zest and orange juice into a saucepan over a high heat. Bring to the boil and then reduce the heat to simmer for ten minutes until the liquid has reduced by a half.

To serve, pour the mulled wine into a bowl and top with slices of Madeira cake.
