Spinach, feta and pine nut salad

Ingredients
- 450g/1lb baby spinach
- 450g/1lb feta cheese, cut into chunks or cubed
- 8 tsp pine nuts, lightly toasted
- 1 red onion, sliced finely
- sherry vinegar, to taste
- light and fruity olive oil, to drizzle
Method

Place the washed spinach with the feta, onion and pine nuts in a bowl.

Sprinkle with sherry vinegar, then drizzle with the oil, which allows the dressing to coat all the ingredients.

Serve alongside grilled lamb, chicken or just with some crusty bread.
